Línea de recuperación de almidón del procesamiento de hojuelas de papa frita de las variedades Desirée y Única para uso en la formulación de snacks

چکیده
En la etapa de rebanado (corte en rodajas) del procesamiento papa frita, se libera almidón que precipita al fondo tina lavado y es desechado como agua residual. El objetivo estudio fue proponer recuperación dos variedades usadas (Desirée Única) aplicarlo para sustitución harina avena formulación nachos por misma empresa estudiada. Las etapas fueron: separación solido-liquido, filtración, sedimentación, secado, molienda, tamizado envasado. rendimiento 2,52% variedad Desirée 2,43% Única. Se determinaron las propiedades fisicoquímicas microbiológicas, utilizando referencia Norma Peruana SA/DM N° 615-2003. Los rendimientos obtenidos fueron 80% 81%
